1⅔ cups (250 g) multicolored tomatoes on the vine, halved

1 clove garlic, crushed

⅛ tsp salt

1 tbsp (15 ml) extra virgin olive oil, divided

1 sheet store-bought vegan puff pastry

6 slices vegan cheese

½ tbsp (8 ml) soy sauce

Fresh basil

Pine nuts

Preheat the oven to 350°F (180°C or gas mark 4).

In a medium bowl, combine the tomatoes, garlic, salt and ½ tablespoon (8 ml) of the olive oil.

Roll out the puff pastry sheet and cut it into six squares. Transfer the squares onto a sheet pan.

Score a square within each piece of pastry approximately ½ inch (1.3 cm) from the edge. Place a slice of vegan cheese within each of the inner squares. You may need to trim off the edges of the slice of cheese to make it fit. Top each piece of cheese with some tomatoes.

In a small bowl, combine the remaining olive oil and the soy sauce. Use a brush or your finger to wash the mixture on the outer edges of the puff pastry.

Place the pans into the oven to bake for 25 minutes, until the edges have risen and are golden brown. Top with fresh basil and sprinkle with some pine nuts. Enjoy!
